Inspiration: Beignets (pronounced ben-yayz), a deep fried dough pastry covered in powdered sugar, were brought by French settlers to South Louisiana in the 1700s and have been synonymous with New Orleans since the 1862 opening of Cafe Du Monde in the French Quarter. They are traditionally enjoyed with Cafe Au Lait (ka-FAY oh LAY) which, much like the Italian latte, is made with steamed milk, but with brewed coffee rather than espresso.
